Orange chicken
Ingredients:
2 lbs boneless skinless chicken breasts (cut into 1-1/2” cubes)
½ cup all purpose flour
1/2 cup cornstarch
1 eggs (beaten)
1¼ teaspoon salt
¼ teaspoon pepper
Oil (for frying)
Orange Sauce-
1 ½ cups water
2 tablespoons orange juice
¼ cup lemon juice
6 tablespoons rice vinegar
2 ½ tablespoons soy sauce
1 tablespoon orange zest (grated)
1 cup packed brown sugar
½ teaspoon ginger root (minced)
½ teaspoon garlic (minced)
2 tablespoons green onion (chopped)
¼ teaspoon red pepper flakes
3 tablespoons cornstarch
2 tablespoons water
Directions
1)Stir egg,salt,pepper and 1 tablespoon oil and mix well.Add cornstarch and flour together.Mix well until the mixture turn bubbly and fluffy.
2)Add chicken pieces,stirring to coat.Heat oil for deep-fry in wok.
3)Fry chicken small batches at a time,and fry 3 to 4 mins or until golden crisp.Remove chicken and drain on paper towel.
4)Clean wok,heat and add 1 tablespoon oil.Add ginger and garlic,stir-fry until fragrant.
5)Add crushed red pepper flakes and green onions,then stir.
6)Add rice vinegar and stir 3 seconds.Add orange juice and bring to boil.Add chicken,stirring until mixed.Stir water,into remaining cornstarch until smooth and add into the chicken.
7)Heat until sauce is thickened.Stir in orange zest.
