Paksiw na tilapia or bangus
Ingredients
2 lbs tilapia or bangus,cut into diagonal
2 cloves garlic,crushed
1 onion,chopped
1 medium ginger,crushed
1/4 cup vinegar
1/2 cup water
2 medium eggplant,sliced
3 stalk of petchay
1 fish or chicken bouillon,dissolved in hot water
salt and pepper to taste
Directions
1)In a large pot,put some ginger,garlic and onion in the buttom of the pot,then add the bangus or tilapia,vinegar and water.
2)Set the stove over medium-high heat,then simmer the fish for about 10 mins or until the fish are half-cooked.Add the fish or chicken buillon
and eggplant and petchay.Cook for 5 mins or until the vegetables are tender.Add salt and pepper to taste.
3)Serve with hot plain rice.
