beef mechado

Ingredients

1 kilo or 2 lbs of beef,cut into chunks

2 sliced bacon

2 or 4 onions depend on the size,sliced quartered

5 medium potatoes,quartered

2 red pepper or green pepper

2 cups beef stock or 2 bouillon cubes dissolved in water

3 bay leaves

1/4 cup vinegar

2 cups tomato sauce or 1/2 cup tomato paste

1 cup soy sauce

salt and pepper to taste

Directions

1)Cut the beef in the middle and insert the sliced of the bacon.In a casserole,combine the beef,tomato sauce,soy sauce,bay leaves and beef stock.Bring to a boil and simmer until the beef is almost tender.

2)Add the vinegar and let boil for 2 mins.

3)Add the potatoes,onions,carrots,and bell pepper.

4)Let simmer until potatoes and carrots are tender,then stir occasionally until the sauce thicken.

5)Serve hot plain rice.
